Vegan Caramelized Onion Chip Dip (Heluva Good Dip Copy)

This is very likely the best dip I’ve ever made. THERE I SAID IT!

Who remembers that Heluva Good chip dip? Well, not “remembers” because it still exists, but I used to LOVE it when I was younger and before I had to cut out dairy. It’s so deliciously creamy & onion-y and it pairs so perfectly with good ol’ sea salt chips (the only way to go), but it’s loaded with questionable ingredients.

So I decided to make my own version and I have to say - I was BLOWN away. This vegan caramelized onion chip dip literally tastes SO much like the OG Heluva Good dip. It’s super silky smooth, packed with flavour and makes the ideal chip or veggie accompaniment to bring to summer BBQs, potlucks or cottage weekends. It is:

  • Cashew based for a creamy but dairy-free texture

  • Made with just a few simple ingredients

  • Rich & flavourful without being super heavy

  • The best chip dip ever

Vegan Caramelized Onion Chip Dip (Heluva Good Dip Copy)


Ingredients

  • 1 heaping cup raw cashews, soaked in boiling water for 30-60 minutes

  • ½ cup unsweetened cashew milk (can sub almond)

  • 1 large sweet onion, thinly sliced

  • 2 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • 1 tbsp nutritional yeast

  • 1 lemon

  • 1 tsp apple cider vinegar

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp sea salt

  • 2 tbsp chopped chives, for topping

Method

Start by heating your olive oil in a large skillet over medium. Add your sliced onions and some salt and stir. Let cook over medium heat, stirring frequently, for about 10-15 minutes or until the onions are golden brown and soft (it could take even longer - be patient!). Add the balsamic vinegar, stir and cook an additional 2-3 minutes. Remove from heat and set aside.

To a high speed blender, add your cashews, cashew milk, nutritional yeast, juice of 1/2 the lemon, apple cider vinegar, garlic powder, onion powder & sea salt. Blend until very smooth. Add your caramelized onions and blend again until they’re almost fully incorporated. Taste and add more lemon if desired (I ended up adding the juice of the other half as well).

Serve topped with chopped chives alongside chips and/or veggies!
