The Best Red Curry Peanut Sauce

I am, and always have been, obsessed with peanut sauce. It’s creamy, it’s salty and it can be used on so many of my favourite meals: rice bowls, noodles, crispy tofu, chicken, etc. A couple of years ago I discovered this hack that makes peanut sauce - if you can even believe it - about 10x better.

Per my red curry almond butter noodles (one of my favourite recipes), adding a big spoonful of red curry paste to your nut butter sauce adds a level of flavour + complexity that cannot be beat. So obviously, I had to try it with peanut butter as well. The flavours of red chili, garlic, ginger + lemongrass complement the peanut butter SO well and make for the most delicious peanut sauce that you’ll want to drink with a straw and put on everything. You’ve been warned.

The Best Red Curry Peanut Sauce


Ingredients

  • Heaping 1/3 cup creamy natural peanut butter

  • 2 tbsp tamari or soy sauce

  • 2 tbsp rice vinegar

  • 1 tbsp honey or maple syrup

  • 1 tbsp sesame oil

  • 1 heaping tbsp red curry paste

  • Water to thin

Method

Whisk all ingredients together in a bowl or jar, adding water a little at a time as needed to thin. Taste and adjust sweetener/vinegar as desired. Pour over cooked noodles with veggies of choice + crispy tofu! Enjoy :)
