I'm quickly popping in to share this recipe that I promised a couple of weeks ago when I teased it on my Instagram. The weeks seriously just fly by (plus my internet has been down since Monday), but I wanted to slip in before the weekend and give you this cookie recipe, because they are just too good not to.

These incredible little cookies are perfect for breakfast, a mid-morning snack or even a lightly sweet dessert. They're hearty, nutty, slightly sweet from the maple syrup and have the perfect amount of crunch. I'm honestly pretty addicted.

I'm obsessed with anything sesame these days (in case you haven't been able to tell), and the combination of peanut butter with crunchy little sesame seeds here is a dream! They also contain hemp, flax and chia to give you that boost of fibre + protein, plus the chunks of juicy, sweet date take these to the next level and add a decadent natural sweetness.

Seedy Sesame-Date Breakfast Cookies (Vegan + Gluten-Free)


Ingredients

  • 1 cup rolled oats

  • ¼ cup maple syrup

  • ½ cup peanut or almond butter

  • ¼ cup hulled hemp seeds

  • ¼ cup ground flaxseed

  • 1 tbsp chia seeds

  • 2 tbsp sesame seeds

  • ½ tsp cinnamon

  • ¼ tsp sea salt

  • ¼ cup chopped extra dark chocolate

  • ⅓ cup chopped dates

Method

Preheat your oven to 350 degrees and grease or line a baking sheet.

In a bowl, whisk together your maple syrup and peanut/almond butter. Add in the rest of your ingredients and stir well to incorporate everything.

Shape dough into balls and flatten them slightly on your baking sheet, as they won’t spread. The dough may feel a bit stiff but just press them firmly into flat rounds as best you can.

Bake for 12-14 minutes or until slightly browned. Let cool and enjoy for breakfast or a snack!

Makes 9-12 cookies
